- Después de las 3 horas, el maíz estará casi cocido. Es hora de agregarle la carne semicocida. Con unas pinzas ve sacando la carne y acomoda encima del maíz. Luego agrega el caldo de la carne, pero debes colarlo primero.
- En el vaso de la licuadora agrega los chiles con su agua de cocción, los ajos y el orégano. Muele perfectamente, cuela y agrega a la olla del pozole.
- Agrega la sal, revuelve y tapa la olla. Continúa cocinando más o menos una hora y media, hasta que la carne esté perfectamente cocida. Prueba la sazón. Debe quedar bien caldoso. Sirve en platos hondos. Acompaña con repollo y cebolla picados, limón y rabanitos. A nosotros también nos gusta acompañar con tostadas untadas de frijoles refritos. Exquisito.
