- En una cacerola ponemos un poco de aceite de oliva y ahí vamos a saltear media cebolla cortada en medias lunas a que se ponga transparente, añadimos 2 dientes de ajo picaditos, 3 chiles guajillos cortados en tiritas, 6 tomates verdes (los de cáscara) también picados, añadimos los xoconostles y ya que dio todo una vuelta, añadimos una cucharada de harina, agua o caldo, sazonamos con 2 o 3 cucharaditas de consomé en polvo
- La probamos, si está muy agria le ponemos una cucharadita de bicarbonato, -no hay que asustarse porque se forma mucha espuma pero al hervir un poco más se acaba y se le quita lo agrio- y le ponemos cilantro picado al servirla para adornar los platos.
