- Mientras tanto, lava el pollo y ponlo a cocer con los 2 litros de agua restantes, en otra olla. Lo hago así porque cuando el pollo empieza a hervir, suelta mucha espuma, de muy mal aspecto. Sólo deja que hierva unos 5 minutos.
- Cuando ya pasó la hora hirviendo el maíz, entonces con la ayuda de unas pinzas, ve sacando pieza por pieza de pollo y agrégalo a la olla del maíz. Cuela el caldo en que estaba el pollo.
- Lava los chiles y ponlos a cocer en unas 3 tazas de agua. Échalos a la licuadora, agrega ahí los ajos y el óregano. Muele bien.
- Ahora, cuela la salsa molida.
- Agrega el consomé y deja que se termine de cocer el pollo. Comprueba la sazón.
- Lo servirás con estos acompañantes:
- Repollo picado fino, cebolla picada, rábanos picados, chiles jalapeños picados, limón, tostadas. A nosotros nos gusta servirlo con tostadas con frijoles fritos (ver receta).
